¾ cup margarine or butter
1 1/3 cups white granulated sugar
1 large egg
¼ cup baking molasses
2 cups flour
2 tsp baking soda
¼ tsp salt
1 tsp each of ginger, cinnamon, and cloves
Directions
- Preheat oven to 375 Fahrenheit. Lightly grease cookie sheets.
- Cream together butter, sugar, eggs and molasses. Beat until smooth and creamy.
- Add flour, baking soda, salt, ginger, cinnamon, and cloves. Mix well into a firm dough.
- Roll into 1” balls. Dip in sugar and place on the cookie sheet. I sometimes flatten them with the back of a spoon to help them bake more evenly without burning on the edges.
- Bake 10-12 minutes until the tops start to crack. Watch carefully as these cookies can go quickly from chewy to brittle.
- Remove from the oven and let sit on the cookie sheet for 5 minutes before moving them to cooling racks. Makes about 4 dozen.
