
Chocolate Zucchini Bread
Preparation time: 15 minutes
Cooking time: 45 minutes
Makes one loaf, but recipe doubles well.
Ingredients
1 ½ cup shredded zucchini
1 ¼ cup all purpose flour
1/3 cup cocoa
¾ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 cup semi sweet chocolate chips
2 large eggs
¼ cup vegetable oil
¼ cup vanilla yogurt, Greek yogurt is best
½ cup granulated sugar
½ teaspoon vanilla extract

Directions
- Preheat oven to 350 F with oven rack in a lower position.
- Grease loaf pan.
- Wash and shred the zucchini, setting it aside on paper towel to absorb extra moisture.
- Mix the flour, cocoa, baking soda, baking powder, salt, cinnamon, and chocolate chips together in a large mixing bowl and set aside.
- In another bowl mix eggs, vegetable oil, yogurt, sugar and vanilla.
- Add shredded zucchini and stir well.
- Add this mixture to the dry ingredients.
- Mix lightly until all is well blended.
- Pour batter into the loaf pan.
- Bake at 350 F for approximately 45 minutes until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan before removing it to slice and serve. Enjoy!
