Hot Spinach Dip

Ingredients
4 cups fresh spinach leaves
1 pack (8 oz) cream cheese
1 cup sour cream
1 tsp minced garlic
2 tsp. roasted pepper and garlic seasoning, for extra zing
½ cup grated parmesan cheese
1 cup shredded mozzarella and cheddar cheese mix
Chopped parsley, or finely chopped spinach for garnish
Cooking spray
Assorted fresh veggies and crackers for dipping.
Bread bowl (hollowed out bread can also be used for dipping).

Ingredients
4 cups fresh spinach leaves
1 pack (8 oz) cream cheese
1 cup sour cream

Bread bowl (hollowed out bread can also be used for dipping).
Directions
- Wash the spinach and reserve a leaf or two for the garnish. Steam the remaining spinach until it is wilted. Rinse with cold water. Press out all water, chop spinach and set aside.
- In a separate bowl mix cream cheese (softened), sour cream, cheeses, and seasonings. Set aside a little of the mozzarella cheddar cheese for the topping.
- Add the spinach, mix well, and place all in a baking dish coated with cooking spray.
- Bake for 20 minutes at 375 F.
- While dip is baking, chop the remaining spinach finely for a garnish. If serving in a bread bowl, hollow out the bread bowl and cut leftover bread into chunks for dipping. Prepare fresh veggies and other items for dipping.
- Remove dip from the oven and turn oven temperature to broil. Add remaining grated cheese and return to the oven for 3-5 minutes for a browned cheese topping. If serving in a bread bowl, scoop the hot dip into the bread bowl, add grated cheese for topping and put the bread bowl filled with dip into the oven to warm the bread and brown the cheese topping.
- Remove from the oven and add the chopped spinach or parsley garnish on top.
- Serve with fresh vegetables, crackers, and bread chunks to dip.
